We had an extremely freezing January and
then we have such a lovely midsummer in 2016. When we arrive at Jyväskylä Central
Railway at midnight, the sky shines orange pink clouds with the background of
navy blue.
The very next day we drive to Laukka to
visit mummi (granny in Finnish) and then continue on the road to the summer
cottage. This wooden tiny cottage along the lakeside always provides me a
tranquility, I like to sit on the sofa and read the latest Mökki magazine, or
watch football match with family, sometimes grab a chair, sit at the bank, do
yoga or completely nothing, only listen to the wind and water singing.
We have a parasol lunchtime, and the super
food are smoked salmon, fruit salad, potatoes, grilled meat, loads of berries,
and after sauna, we traditionally heat the huge sausages around the fireplace.
My favourite meals are difficult to specifically point out, but all time the grilled
bacon/chicken with pineapples is on my top list.
Here are how to make this BBQ family treat:
1 pineapple, peeled, cored and cut into
half-inch chunks, about 30 chunks
1 box of sliced lean bacon
2 boxes of sliced chicken breast chunks
Dip the chicken breast chunks into light soybean
sauce for about half an hour
Pierce chicken, pineapple chunks and bacon with
a metal toothpick, place on a baking sheets/grill bar plank. Bake/grill until
the bacon is crispy chicken and pineapple turn slightly brown, about 15-20
minutes.
Enjoy the life, take the bite, breathe the summer, and
cherish the moment.
